Cookies for Breakfast

This long weekend has provided a much needed break from the chaos of school and activities.  Sure, my kids have had homework, but nothing like they have on a regular weekend.  Although they’re not exactly looking forward to getting back to the grind, they are rested and ready to see their friends.  I’m going away this week (yippee!!), so I’m trying to make things as easy as possible while I’m away.

Forgive me if I’m the last person to know about this trick, but yesterday I made muffins with 2 ingredients. Celebrating National Pancake Week

National Pancake Week is February 19-25.  My kids LOVE pancakes, so National Pancake Week is certainly worth celebrating in our house!   We love experimenting with different flavors and syrups, but plain pancakes can be dressed up with a little food coloring.

To make these, start with a bowl of batter, uncolored.  Make a pancake (or 2), then add a drop of food coloring to your batter.  Repeat this until all of your batter is gone.
